Easter goodies-Chewy Chocolate-chip Cookies

Its April already and Easter is on its way, so lets make some bake sale goodies. This recipe is very close to my heart and my favorite for two reasons, firstly, this recipe is my very first Blog for you guys and secondly because I have made a lot many cookies in the past but none could give me the taste that I always craved for. Its these little goodies that my heart beats for, when I want to eat something sweet. The recipe is very easy, full proof, and requires only 15 minutes to bake. Isn't that great? so lets get cooking oops baking.



Prep Time: 10 min

Cook Time: 35 min

Bake Time: 15 min

Total Time: 60 min

This recipe makes 15 cookies

1 cup= 250 ml

Ingredients

1/2 cup unrefined/colpressed coconut oil, packed, not melted (refined coconut oil will not impart any coconut flavor in the cookies, rather it makes these delights soft and chewy)

2/3 cup brown sugar (you can also use white sugar, but brown sugar gives a prominent caramel taste)

3 tbsp honey

1/2 cup milk

1/3 cup unsweetened cocoa powder

1 tbsp pure vanilla extract

1/2 tsp espresso powder

3/4 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 cups of all purpose flour

1 cup unsweetened dark chocolate chopped


I have made this video so that it will be easy for you to know the right consistency to achieve the perfect cookie dough.



Directions:

- Preheat the oven to 180 C.

- Mix together coconut oil and brown sugar until creamy in a large bowl.

- Then add all the liquid ingredients along with espresso powder, cocoa powder and mix until well combined.

- Then add baking soda, baking powder, and salt and again whisk.

- Fold in chopped chocolate chips and flour gently.

- Form little balls out of the dough and place them about 2 inches apart, on the baking paper.

- Bake these goodies at 180 C for 15 minutes or until golden and the top looks set.

- Transfer the cookies on a cooling rack to cool completely.

- Tadaaaaa ready................Enjoy!

P.S. If you make these cookies, please do not forget to enjoy it with cold milk once. Simply break one cookie in a glass, pour cold milk and enjoy the ultimate satiation. Trust me you will forget all other biscuits and milk combo. I hope you enjoy this as much as I did!
