Oven Roasted Achari Paneer Tikka Skewers

Hello guys.... here comes the second course from our five course menu theme. As you already know these courses are my darling husband's recipes and I would surely agree to the fact that men are better chefs, because they give their 100 percent love and effort to cook for their beloved ones. And I am very delighted to share his recipe with you all, because these skewers are guaranteed to be enjoyed by all.

So without much a do lets dive into this lip smacking and thoroughly satisfying recipe.




Prep Time: 30 min

Cook Time: 25 min

Total Time: 55 min + marinating

This recipe serves 4 large skewers

1 cup= 250 ml


Ingredients


paneer 300g

green bell pepper ½ chopped into square 4cm pieces

red bell pepper ½, chopped into square 4cm pieces

red onion 1, chopped into 4cm square pieces



ACHARI MASALA for Marination

yogurt 3/4 cup

chickpea flour 1tbsp

ground turmeric ½ tsp

red chili powder 1.5 tsp

mango pickle 1 tbsp., kindly chop the mango pieces if any

ginger and garlic paste 1 tbsp

garam masala ½ tsp

kasoori methi 1tbsp, crushed it with your palm before adding

chaat masala ½ tsp, see notes below

am choor powder (dried mango powder) ½ tsp

salt as per taste


GREEN CHUTNEY

plum tomato 1, roughly chopped

coriander a large bunch, roughly chopped

mint a bunch, leaves roughly chopped

green chilies 2, roughly chopped

ginger a thumb-sized piece, roughly chopped

sugar ½ tsp

cumin seeds ½ tsp

lemon juice 1 tbsp

salt as per taste

black salt ½ tsp (optional)


Directions

- Cut the paneer and veggies into equal sized pieces.

- Make the Achari masala by adding all the ingredients in a bowl and make a paste.

- Now add the chopped paneer and veggies into the yogurt mixture. Let is marinate at least 30 minutes in a refrigerator. The more time you give to marinate the merrier.

- We roasted the tikka masala in our oven but you can also do it on a stove top but trust me oven works the best to bring the roasted flavor profile without overcooking the dish. So meanwhile you prepare the skewers turn on the oven at 180 C.

- To Assemble the skewers thread the paneer on the skewers along with the bell peppers, onion, and bell peppers. Repeat until the skewer is filled up and start aligning your skewers on the oven rack.

- Place the rack into the oven, with a baking tray underneath to catch any liquid that drips off. Alternatively, if using a BBQ, simply grill until it's cooked to your liking, before giving it a turn.

- Bake in the oven for 25 - 30 minutes, or until the veggies are cooked to your liking.

- Once ready sprinkle lemon juice and some chat masala for that extra kick
