Pesto pasta Barilla way

If I we’re to define this recipe in one word it would be WONDROUS. The reason are three fold;
1. Ready in just 15 min
2. Has lots of greens in it so extremely delightful & wholesome
and
3. Have you seen how it looks..... heavenly!!!👇🏻


This is my go to recipe when I am super hungry and all I think about is food and netflix, because it does not require much preparation and it is so so nourishing.

Pesto pasta Barilla way
Prep Time: 8 min
Cook Time: 12 min
Total Time: 20 min
This recipe makes 2 servings
1 cup= 250 ml
Ingredients
1 tbsp olive oil
250 gm pasta of your choice
1 large onion, diced
1 zucchini, halved and sliced
2 cloves of garlic, sliced
1 tomato, diced
1 bottle Barilla pesto alla Genovese * (200ml)
2 tbsp Italian seasoning
1/2 tsp each Salt & pepper
For Presentation
Sriracha hot sauce
Arugula salad
Cherry tomatoes (Optional)
Parmesan cheese (Optional)
Directions
-Cook the pasta as per the instructions given on the packet. For optimum results opt for Barilla pasta. Some pastas double in quantity once cooked, while some doesn’t change its volume. So add in more pastas according to your requirement.
- Sauté onions with garlic on high heat in a skillet. Cook until onions are brown, keep deglazing the pan with water if necessary.
- Later stir in zucchini and cook until tender.
- Add tomatoes and Italian seasoning with some salt and pepper and saute for another 2 min.The pesto sauce already have salt in it so be very cautious in adding additional salt.
- Now add the pesto paste, mix everything until well combined and then stir in the cooked pasta & tadaaaa.
- Once served do not forget to drizzle some generous amount of sriracha hot sauce on the pasta and present this dish with fresh arugula salad and cherry tomatoes. The pesto paste have Parmesan in it already but you can top the dish with more Parmesan if you desire.

Tips for homemade pesto sauce
* Take a blender and add handful basil leaves (approx 2 cups), 1/2 cup pine nuts or cashew nuts,1 garlic clove, 1/4 cup extra virgin olive oil, 1/4 cup Parmesan cheese, and salt to taste.
Notes
1. Add arugula salad and sriracha sauce only after you have served the pasta in the plate, do not mix it in the pot or it will taste bitter.
2. Some people do not like zucchini, but do not skip it in this recipe,TRUST ME it will make a world of difference in taste plus you are gonna start loving zucchini after this🥰.
3. You can add any other hot sauce of your choice but I recommend sriracha its #ohsoyum ☺️
