Roll a Snack : nourishing Chickpea spread

Hunger strikes in evening? ME TOO!! Let's be honest, when hunger strikes all you want is ready to eat snacks, for example chips and store bought fried snacks isn't it? also you end up having too much that you feel guilty and probably think of skipping dinner, am I right? If so... don't you worry I have got your back.
This is a very easy peasy recipe,you can make it on a weekend and enjoy the guilt free, nourishing snacks variations throughout the week.

The Chickpea spread
Total time: 15 min
1 cup= 250 ml
Ingredients
1.5 cup cooked chickpeas
1 celery rib, finely chopped
1 small carrot, grated
1/4 red bell pepper, finely chopped
1/4 red onions, finely chopped
1 Tbsp (12 g) greens of green garlic, finely chopped
2 Tbsp (10 g) roasted sunflower seeds
1 pickle, finely chopped
1/2 lemon, juiced
2 Tbsp mayo
1 Tbsp tahini
1/2 tsp dijon mustard sauce
1/4 tsp salt
Black pepper
Directions:
-Mash the cooked chickpeas with the back of a fork.
- Add all the remaining ingredients to a bowl and mix well. Store this spread in an air tight container and chill in refrigerator before serving, in order to enhance the flavors.
- Just take a tortilla wrap, or left over roti, spread the Chickpea dip, top it with your favorite veggie (I added celery rib for extra crunch), add a dash of hot sriracha sauce and tadaaaaa...... Can it be any more nutritious?
You can spread this onto a toasted bread along with sliced tomatoes, some baby spinach and salads (as you can see in the image below), or enjoy it as a dip with your choice of crackers. Just a little bit prep on a weekend and you are sorted.
