Utterly cheesy Puffs

Puffs and samosas are my all time favorite. I started liking Puffs even more when I was pursuing my bachelors in Anand-Gujarat. Gloomily in Germany you won’t find savoury puffs anywhere. And I thought making these puffs at home is next to impossible. However, cooking is not just about knowing recipes and making them, it is also about learning and as Julia Child has rightly quoted;
"No one is born a great cook, one learns by doing"
Having said that, I must thank yet another foodie buddy of mine Sonal Gilitwala who made these puffs at home when we visited her. I cannot explain how excited I was to hear the word Puff, that too here in Germany. I thank her so much for sharing with me how to make it.

Once learning how to make it, I tried to re create the same Puff that we would relish during hostel days. First try was a total disaster.... I burnt them in the oven,yes literally the puffs came out black..lol! Second time measurements of the veggies and potatoes were not balanced and THIRD attempt proved "practice makes man (puffs) perfect" 😉bang on, it turned out just like how I wanted.

Recipe
Utterly cheesy Puffs
Prep time 10 min
Cooking time 15 min
Baking time 20 min
Total time 45 min
1 cup=250 ml
This recipe makes 6 Puffs*

Ingredients
1/2 tbsp oil
1 tsp cumin seeds
1/2 tsp asafoetida
1/2 onion, chopped
2 cloves of garlic, minced
1 tbsp green chili and ginger paste*
1/4 cup peas
1/2 a medium carrot, chopped
1/4 cup sweet potatoes, grated
1/4 tsp turmeric
1/2 tsp red chili powder
1/2 tsp raw mango powder (optional)
1 tsp cumin and coriander powder
3 medium sized boiled potatoes, mashed
1/4 tsp garam masala (optional)
1 tbsp lemon juice
1 sheet Puff pastry*
Cheese slices of your choice
4 tbsp water
1.5 tbsp melted butter
Directions
- Heat oil in a cooking pot.
- Add cumin seeds and let them crackle.
- Then sprinkle asafoetida and add onions immediately, saute until onions are translucent.
- Later add minced garlic, green chili & ginger paste.
- Now stir in peas, carrots, and sweet potato, let them cook.
- Once veggies are cooked, add Salt, turmeric, chili powder, raw mango powder, cumin & coriander powder. Saute well for 2-5 min.
- Gently fold in the boiled potatoes.
- In the end add garam masala and lemon juice.
- Mix well, turn of the stove, stuffing is ready.
- Pre heat the oven on 180 C. And keep the baking tray ready with butter greased baking paper.
- Divide the puff sheet into equal parts, I made 6 puffs from one sheet.
- Lay cheese slice on the puff pastry and then put a dollop of stuffing.
- To seal the edges of the puff apply water on the corners, before folding the sheet.
- Place the folded puff on a baking tray and apply butter on the top to achieve the crispy texture.
- Bake it in the pre heated oven for 20-25 mins or until Puffs looks golden brown.
- Enjoy these savoury delights as is or with ketchup.

Notes:
* For green chili and ginger paste take 2-3 green chilies ,1/2 inch ginger and crush it in a mixer. You can also finely chop the them if you desire so.
*I made three masala puffs and three cheesy puffs and trust me both tasted equally yum. Not to forget that leftovers of these are even tastier.
*Remove the pastry sheet out of the refrigerator an hour before folding the stuffing into it.
